Conservation: 2-3 days in a plastic bag (to avoid it to be completely dry)
Ingredients:
-3 cups and a half of organic flour (500 gr)
-1 spoon of salt (10 gr)
-1 spoon dry active yeast
-Around 2 cups (300 cl )of water (the temperature must be medium)
The steps:
In a bowl (I use my Robot Kitchen Aid), put the flour in it and add the salt.
-Mix everything.
-Add the yeast and mix.
-Start the robot and add water as you go. My tip is to check that the dough removes all that left inside the bowl. Let your Kitchen Aid robot do the work for you.
-Let stand for about 2 hours at room temperature (I put a clean cloth on top)
-Turn on the oven at 465 degrees Fahrenheit.
-Place the dough (which will have doubled in size) on the floured work surface and work it a little more by hand. Form a ball that you will place in an iron cast (I put coconut oil in it beforehand so that my bread does not hang during cooking)
-Place the iron cast in the oven for 35 minutes
-Take everything out of the oven, wait a bit and enjoy!
A little advice:
Never let the salt and the yeast touch directly, or your bread won’t rise.
Once your dough is in the oven, don’t open the door until it’s finished!!
I love to use my iron skillet. The heat in the dough gives the perfect bread! I advise you to have you in your kitchen!
