Orange zest and chocolate chips Muffins

This recipe is the perfect combination of orange and chocolate chips taste ( And even for people who are not into chocolate). I thought it was the right way to celebrate it on a Canadian Thanksgiving breakfast. Actually, I did them this morning, and we finished all of them in the afternoon (we kept 2 for your new neighbours!)

Portions: 9 big muffins
Preparation: 10 minutes
Cooking: 40 minutes
Conservation: 2-3 days in a container
Freezer: yes

Ingredients:
A cup of organic flour (200gr), you can use Spelt Flour too.
Half a cup of organic cane sugar (100gr). For this recipe, I used some coconut sugar (so the taste is a little bit different.
Half a cup of butter (100 gr)
One organic egg
One small spoon of baking powder
A cup of rice milk
Half a cup of chocolate chips
An organic orange

The steps:
-Put the oven at 350 degrees Fahrenheit or 170 degrees Celsius
-Mix the flour, the sugar, and the baking powder
-Melt the butter
-Add the butter, the egg, and the rice milk (or coconut milk or any milk you want)
-Add the zest of the orange (you should use the whole orange)
-Add the chocolate chips
-Mix everything
-Put some muffins baking cup in your muffin pan
-Add the preparation in the mold muffins
-Put your muffin pan in the oven for 40 minutes.

A little advice
Add the rice milk step by step until you find the right texture. I prefer it when it’s more liquid (but it’s really up to your taste!). You can add more chocolate chips, but I really wanted to have more the orange flavor coming out than the chocolate.
